Non-alcoholic eggnog

Ingredients

  • 6 egg yolks

  • ½ cup sugar

  • 1 cup heavy cream

  • 2 cups milk

  • 2 cinnamon sticks

  • 2 cloves

  • ½ tsp nutmeg

  • ½ tsp vanilla essence

Optional toppings

  • Whipped cream

  • Cinnamon

Method

  1. To begin, whisk the sugar and egg yolks together in a bowl until the mixture has lightened in colour and turned creamy. Place to the side.

  2. In a saucepan, over a low-medium heat, pour in the heavy cream, milk, nutmeg, cinnamon, and cloves. Stir until all the ingredients are combined and the mixture is slightly steaming (not boiling).

  3. Add one spoonful of the warm milk mixture into the egg mixture, whisking quickly to combine. Continue this process until about half of the milk mixture has been added into the egg mixture.

  4. Next, remove the cinnamon sticks from the milk mixture. Pour all of the egg mixture into the saucepan to combine with the remaining milk mixture.

  5. For a few minutes, continuously whisk the combined mixture together until the mixture has thickened a little.

  6. Remove the eggnog from the stove and stir in the vanilla essence.

  7. Pour the eggnog into a jug, cover, and place in the fridge to cool down. For extra cinnamon flavour, add the sticks into the jug during this time.

  8. Once the eggnog has cooled, remove from the fridge and serve! Add any toppings you prefer.
