Fast and Not Furious

As promised, I’ll be running through my favourite ever recipe in today’s blog, but let’s start with a little recap.

I’m now just over a month into my recommitment to living ‘the healthy life’ and I’m proud to say I’m still going strong. I haven’t wavered too far from home cooked meals and I’ve somehow remained consistent in the gym, hitting 7 workouts out of the last 8 days.

One thing though, is that my weight loss has slowed way down.. I’m at around 87kg now, so roughly 2.5kg down from my starting weight, but the numbers won't budge. My guess is that although I’m maintaining a calorie deficit, healthy meals and the 16/8 intermittent fast, my protein intake is still very high and I’m working out a lot. So, I may be putting on weight in muscle while losing weight in fat. I’m certainly starting to notice changes in body shape now, so I’d still say we’re on the right path anyway. Perhaps I'll never reach my goal of 84kg, but I'm happy with that if I keep going in the same direction.

By far the most important part of all this consistency, is my diet - and something that has helped me stick very strictly to the 16/8 fast, is finding healthy, filling meals that are high in protein and full of veg. This has made it so easy to stick to healthy foods while fasting, and not be furious about it. (If you hate puns, you better get used to them if you plan on sticking around)

So without further ado, here's by far my favourite recipe of recent times: Creamy Chicken Parmesan Pasta.

Now, I’m no chef, so take all the guidelines and measurements with a pinch of salt (there’s another one). I tend to eyeball most of the ingredients I use, so I’d recommend using some of your own judgement when it comes to indulging yourself in this dish.

I’ve been eating this multiple times per week, every week for about a month now and I don’t think I’ll be getting bored any time soon - yes it’s really that good.

The only downsides of this dish are the cream and cheese - both high in fat and low in pretty much everything else. But it’s a small price to pay for great flavour, and an enjoyable meal that packs in the protein and delivers tons of fresh veg too (plus a good carb kick for your workouts). In any case, I’m a strong believer that we should enjoy everything in moderation and a little parmesan twice a week won’t kill you!
